PAULO'S ENCHILADAS 
1 lb. ground beef or cooked chicken
1-2 tbsp. chopped onion
1/2 c. tomato sauce
1/2 clove garlic or garlic powder
1/2 tsp. cumin
4 oz. green chilies
1 dozen corn tortillas

ENCHILADA SAUCE:

1/2 c. chopped onion
3 c. tomato sauce
1 tsp. chili powder
1/2 tsp. cumin
1/3 lb. mild grated Cheddar cheese

Mix all ingredients for sauce and simmer 15 minutes; set aside. Brown beef and mix with all other ingredients. Salt and pepper to taste. Dip each tortilla into sauce one at a time, allowing them to soak slightly. Remove from sauce and place a scoop of meat mixture on each tortilla and roll up. Place in greased 9x13 inch pan. Pour remainder of sauce over enchiladas. Bake at 350 degrees for 20 minutes. Garnish with a little cheese, onion or olives.
