ROBERTA'S ENCHILADAS 
This recipe is in three parts. Check each part for the various ingredients!

PART 1: SAUCE:

1/2 c. minced onion
1 tbsp. salad oil or vegetable oil
1 tbsp. flour
2 tsp. chili powder
1 can tomato sauce
2 cans water

Saute onion in oil just until the pieces change color. Add flour, chili powder, and tomato sauce with water. Simmer 15-20 minutes.

PART 2: MEAT MIXTURE:

2 lbs. ground chuck
1/2 tsp. pepper
1/2 tsp. salt
1/4 tsp. garlic

Cook meat in skillet until done. Add spices and continue cooking for 2- 3minutes (on low heat).

PART 3: TORTILLAS:

1 pkg. (12) corn tortillas
Oil
1 1/2 c. minced onion
2 c. grated cheese

Preheat oven to 450 degrees. Fry tortillas. To each tortilla, add approximately 1 tablespoon meat mixture, a handful of grated cheese, a handful of minced onion, and 1 tablespoon sauce on top. Roll up in baking dish and seal with toothpick. Add remaining ingredients over top of pan. Bake for 15 minutes. Do not cover.
