ENCHILADA CASSEROLE 
2 lb. hamburger meat
1 onion, chopped
8 oz. can tomato sauce
10 oz. can rotel tomatoes and green chilies
1 pkg. taco seasoning
1 tsp. salt
1 tsp. pepper
1 dozen corn tortillas
2 c. grated cheese

Brown meat, onion, and garlic. Drain and add tomato sauce, rotel, salt, and pepper to meat and cook over low heat until bubbly. Line bottom of 9 x 13 inch pan with tortillas. Pour in meat mixture. Add another layer of tortillas. Top with cheese. Cook at 350°F for 45 minutes.

Delicious! Made this tonight and we all had seconds. I used the mild Rotel and regular taco seasoning mix. I covered it while baking so the corn tortillas wouldn't get hard. Will definitely make this again. Thanks!
