1/2 c. butter
1/2 c. peanut butter
1/2 c. sugar
1/2 c. brown sugar
1 egg
1/2 tsp. vanilla
1 1/4 c. sifted flour
3/4 tsp. baking soda
3/4 tsp. salt
1 box (40) mini peanut butter cups

Mix flour, baking soda, and salt; set aside. Mix butter, peanut butter, and sugars in large bowl until smooth. Mix in egg and vanilla, then slowly add dry ingredients. Shape dough into 1-inch balls and place them in petit fours or mini muffin papers. Bake at 375 degrees for 8 to 10 minutes or until lightly browned. While cookies are baking, unwrap peanut butter cups. As soon as the cookies come out of the oven, QUICKLY press a peanut butter cup into the center of each cookie (before they have time to cool).
