ZUCCHINI APPETIZERS 
3 c. thinly sliced unpeeled zucchini (about 4 sm.)
1 c. Bisquick baking mix
1/2 c. chopped onion
1/2 c. grated Parmesan cheese
2 tbsp. parsley
1/2 tsp. salt
1/2 tsp. oregano leaves
Dash of pepper
1 clove garlic, chopped (optional)
1/2 c. oil
4 eggs, slightly beaten

Heat oven to 350 degrees. Grease oblong pan, 13 x 9 inches. Mix all ingredients, then spread in pan. Bake until golden brown, about 25 minutes. Let stand about 10 minutes before cutting. (Can be eaten hot or cold). Cut into squares like brownies. Can also be served as a vegetable with a main course. Makes about 4 dozen appetizers.
