ZUCCHINI APPETIZER | |
3 c. grated zucchini, unpeeled 1 c. Bisquick 1/2 c. finely chopped onion 1/2 c. Parmesan cheese 1 tbsp. dried parsley 1/2 tsp. salt 1/2 c. vegetable oil 4 eggs, slightly beaten Mix everything and put into a greased 9 x 13 inch pan. Bake at 350 degrees for about 25 minutes or until browned. Remove from oven and let stand 2 to 3 minutes. Cut into 1-inch squares or cut into larger pieces for a side dish. The squares may be frozen. Bake, cool and cut into serving pieces. Put in zip-loc bags using waxed paper between layers. To reheat, place in 350 degree oven for 15 to 20 minutes. |
