3 c. thinly sliced unpeeled zucchini (about 4 sm.)
1 c. Bisquick
1/2 c. finely chopped onion
1/2 c. grated Parmesan cheese
2 tbsp. snipped parsley
1/2 tsp. salt
1/2 tsp. season salt
1/2 tsp. dried oregano leaves
Dash of pepper
1 clove garlic, finely chopped
1/2 c. vegetable oil (hot olive oil)
4 eggs, slightly beaten

Heat oven to 350 degrees. Grease a 9x13 inch pan. Mix all ingredients except zucchini. Fold in zucchini. Spread in pan. Bake until golden brown, about 25 minutes. Cut into pieces about 2x1 inches. Makes about 4 dozen.
