CRUSTLESS PUMPKIN PIE 
1 (29 oz.) can pumpkin (plain)
1 (13 oz.) can evaporated milk
3 eggs, beaten
2 tsp. pumpkin pie spice
1/2 tsp. salt
1 c. sugar
1 pkg. yellow cake mix
3/4 c. butter
1 1/2 c. chopped walnuts or pecans

Combine milk, eggs, pumpkin pie spices, salt, sugar and pumpkin. Pour into two deep 9" greased pie pans. Sprinkle cake mix over top of both. Slice butter evenly over top of cake mix. Sprinkle nuts over butter. Microwave pies, one at a time, for 30 minutes on simmer and 5 minutes on high. Let stand 5 minutes. Serve warm with whipped cream or ice cream. (For regular oven, bake at 350 degrees for 50 minutes or until knife comes out clean.)

Since microwave ovens vary in power, you may need to adjust your cooking time.
