CRUSTLESS RICOTTA PIE 
1 (10 oz.) pkg. frozen chopped spinach
1/2 c. chopped onion
2 eggs
1 1/4 c. ricotta cheese
1/4 tsp. salt (optional)
1/4 tsp. pepper
1/4 tsp. nutmeg
2 tsp. all-purpose flour
1/8 tsp. paprika

Combine spinach and onion in a 1 1/2 quart casserole, cover and microwave on high for 4 to 6 minutes, stirring after half the time. Drain well.

In a medium mixing bowl, beat eggs with a fork. Stir in ricotta, salt, pepper, nutmeg and flour. Blend in spinach and onion. Spread spinach mixture in a 9-inch pie plate with a rubber spatula. Sprinkle with paprika. Microwave on high for 4 minutes, rotating every 2 minutes.

Reduce power to 50 percent. Microwave 3 to 11 minutes longer, or until center is set. Let stand for 5 minutes. 61 calories and 100 mg. of sodium.

Since microwave ovens vary in power, you may need to adjust your cooking time.
