PORK (OR LAMB) CHOP AND POTATO SKILLET | |
4 med. pork or lamb chops 4 slices onion 4 thin lemon slices 4 lg. white potatoes, peeled or 1 (#2) can of white potatoes 1/2 c. ketchup 1 c. water (if using canned potatoes, use the liquid as part of the cup) Brown chops in skillet. Sprinkle with salt and pepper. Top each with one slice of onion and one slice of lemon. Place potatoes around the meat. Combine ketchup and water. Cover and baste occasionally. The meat should be tender in 45 minutes of medium-slow cooking. Serves 4. |
