CRIMSON PORK AND POTATO SKILLET 
4 pork chops (1/2-inch thick)
4 onion slices
4 lemon slices
4 medium potatoes, quartered
salt and pepper, to taste
1 cup water
1/2 cup chili sauce (I use Red Hot brand Sweet Chili)

In lightly greased skillet, brown chops. Top each with onion and lemon slice. Add potatoes. Season with salt and pepper; pour in water. Cover, simmer slowly 45 minutes until meat and potatoes are tender.

Pour chili sauce into sauce, basting meat and potatoes. Cook, uncovered, for an additional 10 minutes.

Serves 4.

I have made this recipe for years! Although, my recipe calls for a full onion, sliced, and potatoes sliced and you make a sauce of ketchup and water. I will try it next time with chili though as that sounds good!
