LOW CAL STIR FRY SWEET & SOUR
CHICKEN
 
8 oz. unsweetened pineapple juice
8 oz. can unsweetened pineapple
2 c. chicken or turkey, cooked or uncooked
1 lg. green pepper, chopped
1 lg. onion, chopped
2 tbsp. soy sauce
1 tbsp. cornstarch
1 tbsp. vinegar

Put pineapple juice in fry pan, heat, add onions, green peppers and chicken. Cut in small pieces. Cook and stir about 10 minutes. Add soy sauce, pineapple and vinegar. Mix cornstarch with 1/4 cup water, add to thicken mixture. Serve over hot rice.
