COCONUT CREAM PIE 
Have a 10-inch pie shell baked, 4 cups milk, scald in double boiler, save 1/4 cup to mix with eggs and sugar.

3 eggs
7/8 c. of sugar
1/2 c. of cornstarch
1/2 of 1/3 c. of flour
1 tsp. vanilla
2 tbsp. butter
Pinch of salt
1 c. coconut (you can substitute coconut for 3 bananas)

Separate eggs to yolks, add 1/4 cup of milk with fork, sugar, flour, cornstarch and salt, add egg mixture and mix well. Add gradually to hot milk. Stir constantly until set. Add butter and vanilla, add 1 cup coconut, place it in pie shell and cover with meringue.
