PIZZA CUPS 
3/4 lb. ground beef
1/2 c. chopped onion
1 (8 oz.) tomato sauce
1 tsp. Italian seasoning
1/4 tsp. salt
1/4 tsp. pepper
2 pkg. (10 each) biscuits
1 c. shredded mozzarella cheese &
1 c. shredded Monterey Jack cheese (Mix together cheeses)

Cook beef and onion; drain fat. Stir in sauce, seasoning, salt and pepper. Spray muffin tins with nonstick spray. Place a biscuit in each cup. Press to cover sides and bottom of cups. Mix cheeses. Place 1 tablespoon cheese in each. Top with rounded tablespoon of meat. Top with remaining cheese. Bake at 400 degrees about 12 minutes. Cool on rack, serve warm. Can be stored in refrigerator 2 days or 3 months in freezer.
