RHUBARB DESSERT 
1 c. sifted flour
5 tbsp. powdered sugar
1/2 c. butter
2 eggs
Pinch of salt
1 1/2 c. sugar
1/3 c. flour
3/4 tsp. baking powder
3 c. cut up rhubarb

Mix 1 cup flour, powdered sugar, and butter. This will be crumbly. Pack into a 9 inch pan. Bake at 350 degrees for 15 minutes. Cool. Beat 2 eggs, salt, sugar, flour, and baking powder. Add rhubarb. Mix well and pour over crust. Bake at 350 degrees for 35 minutes. Cool. can be served with ice cream or Cool Whip.
