LOW CAL PEACH DELIGHT 
1 (8 oz.) can peaches, diabetic
1 1/2 tsp. unflavored gelatin
1/4 c. non-fat dry milk
1/3 c. cold water
1 tsp. lemon juice
2 packets Sweet 'N Low

Drain peaches, reserving syrup. Add water to syrup to make 1 cup liquid. Soften gelatin in syrup mixture. Stir over low heat until gelatin dissolves. Chill until partially set. Dissolve dry milk in 1/2 cup water. Whip gelatin in mixer until soft peaks form. Slowly add milk and continue beating to soft peaks. Add lemon juice and vanilla. Gradually add Sweet 'N Low. Fold in peaches. Pile into parfait glasses and chill. Serves 3-4.
