CREAM OF BROCCOLI AND CHEESE
SOUP
 
1 sm. onion, chopped
3 tbsp. butter
2 tbsp. flour
2 c. milk
Salt and pepper to taste
1 can cream soup (chicken, mushroom, or celery)
1 c. Cheddar cheese, shredded
1 (10 oz.) frozen broccoli (or fresh), chopped

Saute onion and celery in butter. Stir in flour. Add soup and milk; heat. Stir in cheese and broccoli and season to taste. Heat thoroughly but do not boil. Can be done in the microwave.

Since microwave ovens vary in power, you may need to adjust your cooking time.

Good recipe. I added more milk (as was very thick) and more cheese and 2 cloves minced garlic. Tasty!
