SUGAR AND OATMEAL COOKIES 
1 stick unsalted butter, softened
1 stick butter
1/2 c. granulated sugar
1 c. flour
1 1/2 c. quick rolled oats (not instant)
Confectioners' sugar for dusting the cookies

In large bowl with electric mixer, cream together the butter, the butter and 1/2 cup of the granulated sugar until the mixture is light and fluffy and beat in the flour and oats. Roll teaspoons of the dough into balls and arrange the balls 2 inches apart on ungreased baking sheets.

Flatten the balls with the bottom of a small juice glass dipped in the additional sugar and bake the cookies in the middle of a preheated oven, 350 degrees F., for 12-15 minutes or until pale golden. When cool dust them with confectioners' sugar. Makes about 40 cookies.
