LEMON SPINACH FISH ROLLS | |
3 tbsp. lemon juice 1/3 c. butter 1 tsp. salt 1 1/3 c. cooked rice 10 oz. frozen spinach (chopped) 1 c. shredded cheddar cheese 2 lbs. flounder or sole Melt butter with lemon juice, salt and pepper. Mix rice, spinach (well drained), cheese and 1/4 of butter mixture. Spread spinach-rice mixture on smooth bottom of fillet. Roll up fillets and place seam side down, close to each other. Pour remaining butter mixture over and sprinkle with paprika. Bake at 375°F for 25 minutes. |
