LEMON SPINACH FISH ROLLS 
3 tbsp. lemon juice
1/3 c. butter
1 tsp. salt
1 1/3 c. cooked rice
10 oz. frozen spinach (chopped)
1 c. shredded cheddar cheese
2 lbs. flounder or sole

Melt butter with lemon juice, salt and pepper. Mix rice, spinach (well drained), cheese and 1/4 of butter mixture. Spread spinach-rice mixture on smooth bottom of fillet. Roll up fillets and place seam side down, close to each other. Pour remaining butter mixture over and sprinkle with paprika.

Bake at 375°F for 25 minutes.

I had this dish in a upscale restaurant here, in Delaware about 15 years ago. I loved it so much, disecting and noting all contents of this fabulous entre'. Thinking I would try to make it myself at home. Low and behold, within 3 weeks of this event, I saw a Real Lemon lemon juice magazine ad with a recipe suggestion, this one. I have been making it for every "special" dinner for special people that I prepared. My original cut out recipe has become faded and butter spotted. I'm printing this one out as a replacement. Smiles!
