SPINACH QUICHE | |
2 pkg. chopped frozen spinach 2 to 2 1/2 lb. ricotta cheese 6 eggs 1/2 to 3/4 c. grated cheese 2 lb. Italian sausage, both hot and sweet Dash of nutmeg Garlic powder Regular salt and pepper, according to taste Fry sausage. When cooled, slice and put aside. Thaw spinach. Place in microwave or you may add water and place on low heat on stove. When spinach is thawed, squeeze out all water. Set aside. Be careful, it will be hot. Mix ricotta and eggs; beat until creamy. Add nutmeg, grated cheese, garlic powder, salt, and pepper; blend well. Add spinach and sausage and mix well. Pour into uncooked pie shell and cover with additional pie crust. Make slits in upper pie crust and relieve steam. Bake at 325 degrees for 1 hour and 25 minutes, approximately. Makes 2 9-inch pies. |
