7 lg. or 8 med. eggs 2 2/3 c. sugar 1 lb. butter or 1/2 lb. butter and 1 c. Crisco 3 1/2 c. sifted plain flour 1/2 c. coffee cream or evaporated milk 3/4 tbsp. vanilla flavoring 1/2 tsp. lemon flavoring Separate eggs and beat whites with 6 tablespoons sugar added gradually. Put in refrigerator. Cream butter and sugar well. Add egg yolks and blend on medium speed. Set blender at lower speed and add flour and cream alternately. Add vanilla and lemon, then quickly fold in egg whites. Bake 1 hour and 25-30 minutes in greased 10-inch tube pan at 325 degrees. Yummy and Fat City! In bake on second rack from top of oven. GLAZE: 1 c. confectioners' (10X) sugar 1 tbsp. melted butter 2 tbsp. milk or more 1 tsp. lemon juice Mix all ingredients and let run down sides and cover top. |
