CHOCOLATE ZUCCHINI CAKE | |
1/2 c. softened butter 1/4 c. oil 2 eggs 1 3/4 c. sugar 1/2 tsp. salt 1 tsp. cinnamon 2 1/2 c. flour 6 tbsp. cocoa (heaping) 1 tsp. baking soda 1/2 tsp. baking powder 1 c. buttermilk 2 c. grated zucchini 1 tsp. vanilla Cream together butter and oil. Add 2 eggs and blend until light and fluffy. Mix together sugar, salt, cinnamon, flour, cocoa, soda and baking powder. Add this to the above mixture alternating with buttermilk and zucchini. Add vanilla. Pour into well greased 9 x 13 inch pan or bundt pan. Bake at 325 degrees for 40 to 45 minutes. |
