GREEK SALAD 
4 c. greens, romaine, escarole, chicory, torn bite size
2 tomatoes, cut in wedges
4-8 radishes, cut into roses
1 red onion, sliced in rings
1 green pepper, cut in rings
8 oz. can black olives, drained
4 oz. Feta cheese, crumbled
Coarse salt to taste
1 clove garlic, peeled and split
1/2 c. olive oil
1/4 c. lemon juice
Freshly ground pepper to taste

Prepare greens, vegetables, olives and cheese. Pour a little coarse salt into a large salad bowl. Rub it around surface of bowl with the garlic clove. Add greens mixture and toss slightly. Just before serving add oil-lemon juice-ground pepper mixture.
