4 c. torn Romaine lettuce 2 med. tomatoes, cut into wedges 1 sm. cucumber, sliced 1 sm. purple onion, thinly sliced 1 sm. green pepper, seeded and cut into strips 2/3 c. sliced radishes 1/2 c. crumbled feta cheese 3 tbsp. red wine vinegar 2 tbsp. olive oil 1/2 tsp. dried whole oregano 1/4 tsp. pepper Combine first 7 ingredients in a large bowl. Combine vinegar, oil, oregano, and pepper in a small bowl, stirring well. Pour vinegar mixture over lettuce mixture, tossing well. Yield: 10 servings, about 66 calories per 1 cup serving. Protein, 2.0; fat 4.2; carbohydrates 5.9; cholesterol 5; iron 0.8; sodium 72; calcium 47. |
