POTATO, BROCCOLI, CHEESE SOUP 
10 potatoes, scrubbed & cut into cubes (leave skin on)
1 med. onion, chopped
Head of broccoli, chopped (including stems, peel outer edge near bottom)
3 tbsp. fresh parsley, chopped fine
Salt & pepper to taste
3/4 c. milk
2 c. shredded cheddar cheese

Place potatoes, onion and broccoli in large pan. Fill with water until vegetables are just barely covered. Cook on medium heat about 45 minutes until potatoes are tender. Remove from heat and mash vegetables and liquid with potato masher. Add milk, parsley, salt and pepper. Add cheese and simmer until cheese melts.
