HOLIDAY PEPPERMINT COOKIES 
1 c. butter, softened
3/4 c. sugar
1 egg
3 c. all purpose flour
1/4 tsp. salt
1/2 c. crushed candy canes or peppermint candies
5 tsp. warm water
3/4 c. confectioners' sugar

Heat oven to 350°F. In medium bowl, beat butter and sugar until light and creamy. Add egg and beat until blended. Stir in flour and salt, then the crushed candy. Add red food coloring to dough if desired. Roll 1 tablespoon of dough into ball. Place on ungreased cookie sheet. Bake cookies 8 to 10 minutes until firm. Cool on sheet for 1 minute. Transfer to wire rack to finish cooling.

Mix water and confectioners' sugar together to form icing. Dip top of each cooled cookie in icing (sprinkle with additional crushed candy, if desired) and allow to dry.

Yields approximately 48 cookies.

Great cookies! I made a few adjustments... I added an extra egg (2 total) and 1 tsp baking soda as suggested, I also added 1 tsp vanilla and crushed 2 extra candy canes reserving 2 tsp for the frosting which melted in the water, since I didn't have peppermint extract. I made 45 cookies and and I did flatten them down a little so they would cook a little faster... grand-kids kept asking when they'd be finished! I'll be making these again with the adjustments made!!

I used cookie portioning scoop and got about 36 cookies instead of 48 but they are so easy to make I may do a second batch tomorrow. P.S. they are good with or without the frosting.

I don't know what the heck I did wrong! The dough is a very very dry mix...when baked, the "ball" never flattened (smushed with a fork afterwards) and they tasted like flour. Because there is no liquid added to recipe it was just a mess!

Very tasty...I didn't have butter in the house, so subbed out 3/8 c. crisco, 3/8 c. margarine, added an egg, and added the peppermint extract to the icing. Nice and soft and yummy.

Loooooooved the cookies!! I am not a baker but this recipe was easy. The only concern I had was after eight minutes of baking the balls never "melted". So, I removed them from the oven and gently pressed down with a fork. The melted peppermint oozed from all directions. Yummy! They even tasted better the second day.

My first round followed the recipe exactly and turned out ok. After that I made a few adjustments and it turned out much better. I only made it with 1 and a half sticks of butter and added an egg (2 total). Additionally, I added 1 tsp. of baking soda, like Jeni suggested and 1/2 tsp. peppermint extract. I also flattened the cookies a bit before cooking. After the adjustments, I will be making the cookies again.

Sooo good! But do not roll into a ball, I would flatten them at least a little. When I rolled them into balls they turned out really hard, but thinning them out made them easier to eat. They taste terrific.

We separated the dough and dyed 1/2 red and left 1/2 plain. Then when we rolled them, we used part of each dough to give them a tye dyed effect. They look great and my daughter is proud to share them at the cookie swap! I have to admit, I didn't trust the fact that the recipe called for no leavening agent, so I added 1 tsp. of baking soda.

Approximately 5 standard candy canes will yield 1/2 cup. Would recommend using "sprinkles" rather than additional peppermint. You might want to try substituting 1 tsp. peppermint flavor for icing. Very easy recipe to follow and bake.
