COOKIE HOLIDAY CHEESECAKE | |
2 (16 oz. ea.) rolls chocolate chip cookie dough (Pillsbury), divided 2 (8 oz. ea.) pkgs. cream cheese, softened 1/2 cup sugar 2 large eggs 1 tsp. vanilla extract red or green food coloring (optional) Preheat oven to 350°F. Press one roll of cookie dough into the bottom of a lightly greased 13x9-inch baking pan. Make sure the whole pan is covered. Set aside. Beat cream cheeses at medium speed with an electric mixer until creamy. Gradually add sugar, beating well. Add eggs, one at a time, beating well after each addition. Add vanilla, beat well. If desired, add food coloring, either mix or beat in. Pour mixture into prepared pan. Place remaining roll of cookie dough on top of cream cheese layer (either by making hamburger-style patties or rolling out the dough). Bake at 350°F for 35 to 40 minutes.
