MOM'S SOUR CREAM POTATO
CASSEROLE
 
12 med. potatoes
1 pt. sour cream
1 sm. onion (chopped
sm. piece of butter
1 c. shredded cooper cheese

Save a few slices of cheese for top of casserole. Cook potatoes with jackets ahead of time. Chill. When ready, fill dish, cut potatoes into 1/2 inch pieces. Mix sour cream, onion with potatoes. Each layer, dot with pieces of butter and shredded cheese. Then melt 1/4 pieces of butter. Add 1 cup bread crumbs, or as needed until lightly browned. Add to casserole on top. Bake 30 minutes.
