POTATO SOUR CREAM CASSEROLE 
6 med. potatoes
1 lg. carton sour cream
1 1/2 c. grated cheddar cheese
1 stick butter, melted
1 tbsp. minced onion
Salt and pepper to taste
1 c. grated cheddar cheese

Boil potatoes in skins. Chill overnight. Peel and grate potatoes on large side of grater into large bowl. Add remaining ingredients except the 1 cup grated cheese. Spread the potato mixture into a 2 1/2 quart casserole. Bake at 350 degrees for 35 minutes or until hot clear through. Sprinkle on reserved cheese and bake until cheese is melted.
