SOUR CREAM POTATO CASSEROLE 
6 med. potatoes
2 c. shredded cheese (med. or sharp)
1/4 c. butter
1/3 c. chopped fresh green onions
Salt and pepper to taste
2 tbsp. butter
2 c. sour cream (2 cartons)

Boil potatoes with peeling until just done. Cool and coarsely grate. Melt butter. Add butter, cheese, onion, salt and pepper and sour cream. Pour in greased casserole. Dot with the 2 tablespoons butter. Bake at 350 degrees for 25 minutes. If it starts getting too brown before the 25 minutes are up; cover.
