SOUR CREAM POTATO CASSEROLE 
1 c. sour cream
1 c. cottage cheese
2 c. mashed potatoes, just mashed, no milk
1 sm. onion, minced
1 egg
2 tbsp. soft butter
3/4 tsp. salt

Beat the whole business together, turn into a buttered casserole and bake for 1 hour at 350 degrees. I usually dot the top with a little more butter and sprinkle with some paprika, just adds a little color and extra zest. People always come back for more of this one.
