SOUR CREAM POTATO CASSEROLE 
6 med. potatoes
1/2 c. butter, melted
2 c. grated Cheddar cheese
2 c. sour cream
1/2 c. chopped green onions
Salt & pepper to taste
2 tbsp. butter
Parsley or paprika for garnish

Preheat oven to 350 degrees. Boil potatoes for 8 minutes. Then finely dice. Combine potatoes, 1/2 cup butter, cheese, sour cream, onions, salt and pepper. Pour into a greased casserole. Dot with butter. Bake for 25 minutes. Garnish with fresh parsley or paprika.
