SWEET POTATO BAKE 
3 cups cooked sweet potatoes
1 cup sugar
1/2 cup milk
1 tsp. cinnamon
2 eggs, separated
2 cups oats
2 cups brown sugar
1/2 stick butter, melted
1 cup pecans

Beat egg yolks well and combine with potatoes, sugar, milk and cinnamon. Beat egg whites until stiff and mix them in the potato mixture. Combine, oats, brown sugar, pecans and melted butter. Sprinkle over top of potatoes.

Bake at 350°F or 400°F oven for 55 minutes or until knife inserted in center comes out clean.
