LINDA'S SLICED BAKED POTATOES 
4 medium potatoes
1 tsp. salt
1 to 2 tbsp. butter, melted
2 to 3 tbsp. chopped fresh herbs (i.e. parsley, chives, thyme, basil)
2 to 3 tsp. dried herbs, caraway seeds or cumin seeds
4 tbsp. grated Cheddar cheese
1 1/2 tbsp. Parmesan cheese

Preheat oven to 425°F.

Peel potatoes if skin is tough, or scrub; rinse them. Cut potatoes into thin slices almost all the way through.

Tip: Use a wooden spoon handle to prevent cutting through.

Put potatoes in baking dish, fanned slightly. Sprinkle with salt; drizzle with butter; sprinkle with herbs of your choice.

Bake potatoes at 425°F for about 50 minutes. Remove from oven; sprinkle with cheese and bake for another 10 to 15 minutes until lightly browned and cheese is melted.

Note: Potatoes should be soft inside.
