MIXED VEGETABLE BAKE 
2 cans or 1 pkg. frozen mixed vegetables
1/2 c. celery, chopped
1/2 c. onion, chopped
1 c. mayonnaise or 1 can mushroom soup
1 c. shredded cheddar cheese
1 stick melted butter
1/4 lb. or 1 stack saltines

Saute celery and onions; if using frozen vegetables, boil in water for about 10 minutes. Combine celery, onions, vegetables, mayonnaise or mushroom soup. Melt butter; crush saltines and combine. Pour vegetable mix into 2-quart baking dish; sprinkle cheese then sprinkle cracker mix on top. Bake at 350 degrees for 30 minutes.
