BANANA NUT BREAD | |
2 1/4 c. sifted flour 3 tsp. baking powder 1/2 tsp. salt 1/3 c. soft shortening 3/4 c. sugar 1 egg, beaten 1/2 c. chopped nuts 1/2 c. mashed ripe bananas (3 med. sized) 1/4 c. undiluted evaporated milk Sift flour with baking powder and salt. Cream shortening and add sugar. Cream well together. Add egg and mix thoroughly. Add nuts to flour mixture. Mix milk with bananas and add to creamed mixture alternately with flour, beginning and ending with flour. Pour into a greased loaf pan, 8"x4"x3" and bake in a moderate oven, 350 degrees, for about 1 hour or until bread shrinks from the sides of pan. The bread is even better if wrapped in aluminum foil or stored in a tin box for several days before using. |
