BANANA NUT BREAD 
1/2 c. butter
1 c. sugar
2 eggs, beaten
3 med. bananas, mashed or broken into chunks
2 c. flour
1 tsp. baking soda
1/2 tsp. salt
1 c. chopped walnuts (works best)

Cream butter and sugar until light and fluffy. Add eggs and mix thoroughly. Add bananas and mix in well. Sift dry ingredients and add to banana mixture. Stir in nuts, don't mix with mixer. Pour into greased 9 1/2 x 5 1/4 x 2 3/4 inch loaf pan. Bake at 375 degrees for 15 minutes, then reduce heat to 350 degrees and bake 50 minutes longer. Check with toothpick to be sure it is done. The top will crack. This recipe can be made doubled successfully. This recipe has been in my family for over 40 years.
