GOLDEN FISH BAKE 
6 halibut or other fish steaks or lg. fillets
1 1/2 tbsp. vegetable oil
2 tbsp. butter
1 med. tomato, chopped
1/4 lb. mushrooms, sliced
2 green onions with tops, chopped
3/4 c. grated sharp Cheddar cheese
1 egg, beaten
1 tsp. salt (optional)
1 tsp. lemon pepper marinade (optional)

Preheat oven to 500 degrees. Place fish on oiled baking sheet. Drizzle with oil. Bake for 5 to 8 minutes or until flakes. While the fish cooks, saute mushrooms, onions in butter. Stir in tomato, cheese, egg, salt and lemon pepper. Spoon over fish. Broil 5 inches from heat until topping is browned. Serves 6.

My husband loved this recipe, he said it was the best fish dish he's ever had. I didn't have a tomato, so I used a half cup of marinara sauce, and I actually only used 1 (8 oz.) piece of fish. No wonder he liked it so much, it was super saucy.
