SESAME OR ALMOND BAKED FISH
1 1/2 lb. fish fillets or steaks, each about 1/2 inch in thickness
Paprika
All-purpose flour
2 tbsp. butter
2 tbsp. salad oil
1/4 c. sesame seeds or sliced almonds
Salt and pepper
Lemon wedges

Wipe fish with paper towel. Place shallow baking dish large enough to hold fish in single layer in oven to preheat, 450 degrees. Lightly sprinkle fish with paprika, then coat with flour; shake off excess. Remove pan from oven. Add butter melts (fat should be about 1/8 inch deep).

Lay fish in pan and turn to coat with melted butter. Sprinkle evenly with sesame seeds or almonds. Bake uncovered for 10 to 12 minutes or until cooked. Season with salt and pepper to taste and garnish with lemon. Serves 4 to 6.
