MEAT LOAF 
1/2 lb. chopped beef
1/2 lb. chopped lean pork
1 tbsp. chopped parsley
4 tbsp. olive oil
2 eggs
1 hard boiled egg
3 tbsp. grated Romano cheese
1/4 lb. Mozzarella cheese
Salt & Pepper to taste

Mix meat, eggs, cheese, parsley, salt and pepper thoroughly. Pour 2 tablespoons of oil in bottom of small deep oblong baking dish. Put half of meat mixture in it. Slice Mozzarella and hard boiled egg. Place layer of each over meat. Cover with balance of meat mixture to form a loaf. Pour 2 tablespoons of oil over loaf; bake in moderate oven about 25 minutes or until golden brown but not dry. Slice and serve very hot. Serves 4.
