MOZZARELLA MEAT LOAF 
1 chopped onion
1 tbsp. olive oil
1 chopped sweet red pepper
1 clove chopped garlic
1 tsp. basil
1/2 tsp. thyme
1 1/2 lbs. ground beef
1/2 lb. ground pork
1 c. old fashioned oatmeal
1 egg
4 oz. Mozzarella cheese, shredded or cut into 1/4 inch cubes
1/2 c. Parmesan cheese, grated
2 tbsp. parsley
3/4 tsp. salt
1/8 tsp. pepper
1/4 c. catsup

Preheat oven to 375 degrees.

Saute onion in oil in large skillet over medium heat for 3 minutes. Add red pepper, garlic, basil and thyme; saute for 5 minutes.

Mix beef, pork, oats, egg, cheese, parsley, salt and pepper in large bowl. Add vegetable mix. Shape into loaf and place on jelly roll pan lined with aluminum foil. Bake for 30 minutes. Brush loaf with catsup and bake 25 minutes or until cooked through.
