MOZZARELLA MEATLOAF 
2 lb. ground meat
2 lb. sharp Cheddar cheese, grated
20 Ritz crackers, crumbled
1 (8 oz.) can tomato sauce
1 lg. egg
1 lg. onion, grated
1 pkg. Mozzarella cheese, grated

Mix all ingredients together except pizza cheese. Shape into loaf and place in pan. Make tunnel indentation in top of loaf. Press cheese into indentation (Mozzarella). Bake at 350 degrees for 90 minutes. Cheese on top will turn very dark. Makes 16 servings. This recipe may be halved. Reheats beautifully.
