EASY GOURMET STUFFED CHICKEN | |
I haven't met anyone yet who doesn't like this chicken. It is very simple, although it seems like some work. I usually serve this with broccoli and baked potatoes. 4-6 medium to large boneless skinless chicken breasts 1 container crumbled feta cheese 1 (8 oz.) block Mozzarella cheese, thinly sliced 1 container cherry or grape tomatoes, thinly sliced 1 (6 oz.) can or fresh black olives, sliced (optional) chicken & poultry rub seasoning (I use Lawry's) Clean chicken and fry on medium heat using olive oil. Season well with chicken rub on both sides (or use your favorite seasonings). Chicken usually takes 20 minutes until almost done. Remove from skillet and let rest. After cooling off slice the breasts open and stuff with both cheeses, tomatoes and olives. Close the chicken as best you can and top with the cheeses, tomatoes and olives. Place in baking dish. Bake at 375°F for another 15 minutes until cheese is melted and browning on top. Serve and enjoy! Serves 4 to 6. Submitted by: Debra Pickenpaugh |
