TOFU, BROWN RICE AND VEGETABLE
CASSEROLE
 
4 1/2 tbsp. oil
1 1/2 tbsp. butter
1/2 c. chopped onion
2 c. cooked brown rice
12 oz. tofu, drained and diced
2 tbsp. Tamari sauce or soy sauce
1 c. milk
3 slices of good whole bread, made into cubed
1 c. cubed cheese, cheddar or Mozzarella
2 oz. grated cheese
1 c. cooked until crisp-tender, broccoli or carrots

Cook rice according to directions. Coat large skillet with the oil. Add onion and saute until transparent. Add rice, tofu, vegetables. Season with Tamari sauce. Gently stir in bread crumbs and cheese. Add milk. Mix thoroughly and place in lightly oiled 2 quart casserole dish. Top with grated cheese and bake in 350 degree oven for 45 minutes to 1 hour.

Very good served with a fresh fruit salad.
