MOZZARELLA MEAT LOAF 
2 lb. ground beef
2 eggs, slightly beaten
3/4 c. soft bread crumbs
1/2 c. vegetable juice cocktail
1/2 tsp. oregano
1/2 tsp. salt
Pepper
Garlic salt
6 oz. mozzarella cheese, chopped
3 tbsp. Parmesan cheese
1/2 c. tomato paste

Combine first 6 ingredients with 1/4 teaspoon pepper and 1/2 teaspoon garlic salt in bowl; mix well. Shape half the mixture into flattened oval in 9 x 13 inch baking dish. Spread chopped mozzarella and 2 tablespoons Parmesan cheese to within 1 inch of edge. Top with remaining ground beef mixture, sealing edges. Spread tomato paste over top. Sprinkle lightly with pepper and garlic salt. Bake at 350 degrees for 1 hour. Top with additional mozzarella cheese and 1 tablespoon Parmesan cheese. Bake until cheese melts.
