MEAT CROQUETTES 
2 c. thick white sauce
4 c. coarsely ground or finely chopped cooked meat
Flour
1 egg, slightly beaten
2 tbsp. water
Fine dry bread crumbs
2 tsp. minced onion and parsley

Mix white sauce, minced onion and parsley and chopped meat. Spread out on flat plate and chill thoroughly. Shape into cones. Roll in flour, then dip in mixture of egg and water. Then in bread crumbs. Fry in deep hot fat 365 degrees until delicately browned (1 1/2 to 2 minutes). Be careful not to puncture during frying. Drain on paper towel in medium oven (350 degrees) until serving time.
