CHICKEN CROQUETTES 
1 whole (2 to 3 lb.) chicken, cooked and boned
1 lg. onion
2 stalks celery
1 c. flour
1 c. milk
Salt and pepper to taste
2 c. bread crumbs
Oil
2 tsp. parsley
1/2 tsp. garlic
3 eggs
2 tbsp. water

Cook chicken (bake or boil) remove skin. Place boned, cooked chicken in food processor; finely chop. Remove. Place onion and celery in food processor. Chop finely. Next, place chopped onion and celery and 1 cup of milk in large frying pan, heat through add spices. Dissolve 1 cup flour with 1 cup milk. Pour flour mixture in pan.

Bring to a boil stirring constantly. Add ground chicken. Cook until mixture bubbles. Stir occasionally until mixture comes away from side of pan. Spread mixture in ungreased pan, cover and chill until cool to the touch.

Shape mixture into logs. Dip each log into flour, egg, then bread crumbs.. Heat oil, fry croquettes in hot oil for 2 minutes or until golden brown. Drain on paper towels. Keep warm until serving time.
