PINEAPPLE CASSEROLE 
1 stick butter
1 (20 oz.) can chunk pineapple, drained and save juice
1/4 c. sugar, brown or white
2 tbsp. flour
1 c. sharp shredded cheese
1 roll Ritz crackers

Melt butter in 9 x 13 inch pan. Drain pineapple, save liquid. Put pineapple in pan. to juice add 1/4 cup sugar and 2 tablespoons flour. Cook until slightly thickened. Pour over pineapple. Will seem slight. Top with cup of shredded cheese, add crushed Ritz crackers. Bake 30 minutes at 350 degrees. Very good as a side dish with most meats.
