“EXTRA MOIST BANANA BREAD” IS IN:
NEXT RECIPE:  FEATHER LOAF CAKE

EXTRA MOIST BANANA BREAD 
3 cups flour
1 tsp. baking soda
1 tsp. each of cinnamon, ginger, nutmeg
2 cups sugar
1 tsp. salt
1 cup chopped nuts (optional)
3 eggs
1 1/2 cup vegetable oil
1 (8 oz.) can crushed pineapple, undrained
1 1/2 tsp. vanilla
2 cups mashed ripe bananas

Sift dry ingredients, add remaining ingredients. Stir with a wooden spoon only until well blended. Pour into two greased loaf pans and bake at 350°F for 60-80 minutes.

Soooo good! Never had any banana nut bread this moist! The pineapple is the trick! Made two loaves. Froze one for later. Freezes very well! Will make this many more times!

Extra moist banana nut bread is the very best!!! I have made it many times and it always gets rave reviews. I use pecans, and I don't chop them small. I leave the pieces of nuts good size. Everyone really loves it.

I started making the bread and discovered someone ate some bananas so I added only 1 cup of banana and added 1 cup of sour cream. No ginger or nutmeg and added 2 tsp. cinnamon instead of 1 tsp. I added some chocolate chips and pecans.

It was soooooo goood! I did substitute applesauce for oil and used fresh ginger and added roasted oats and walnuts with a smidge of butter to the top!!! it was delicious

This is the best banana bread recipe I've ever tasted. I shared it with family members and they love it, however I excluded the nuts and pineapples. I substituted the salad oil with canola oil and the ginger with nutmeg. It was gone in two days.

I'm sure these breads are delicious, but with all the combinations of fruit in them, they might better be called fruit bread, don't you think? I prefer my banana bread with bananas only, no vanilla and NO other spices. Try it, it's delicious. The flavor of bananas truly shines through, that is what we want, isn't it?

OMG... How many banana breads have I made and they were DRY!

This recipe is the beat tasting, moist banana bread in the WORLD!!!! I made one large banana bread and 12 muffins using this recipe.. My friend came over and ate 3 banana muffins and I ate 4 LOL!

I have made this bread several times now, following the recipe as is (using nuts) and it's the BEST banana nut bread ever! I think I've tried everything in the past to get a moist bread, and no matter what, I was disappointed. Not with this recipe! Thanks!

I added 1 cup chopped pecans & 1/2 cup Craisins. I also substituted Xagave Nectar instead of sugar. The sugar exchange for baking is use 2/3 cup Xagave for every cup of sugar.
