FEATHER LOAF CAKE 
2 3/4 cups sifted cake flour
2 teaspoons baking powder
1/2 teaspoon salt
3/4 cup (1 1/2 sticks) butter
1 1/4 cups granulated sugar
4 eggs, separated
1 teaspoon vanilla or lemon extract
1/2 cup milk

Preheat oven to 325°F. Grease a loaf pan 9x5x3-inch (approximately).

Whisk together flour, baking powder and salt.

In a mixing bowl beat butter, gradually adding 1 cup sugar, until very light and fluffy. Beat egg yolks and add with flavorings. Mix well.

Add about 1/3 of the flour mixture, then some of the milk alternately, then more flour, etc., beginning and ending with the flour, and mixing thoroughly after each addition.

In a clean bowl with a clean beater, beat egg whites until stiff but not dry, gradually beating in remaining sugar. Fold the beaten egg whites gently into the batter.

Pour batter into greased loaf pan and bake for about 1 hour or until a wooden pick inserted in center comes out clean. Cake will spring back when lightly touched in center.

Makes 10-12 servings.
